Vinification: After careful selection of the best grapes, characterized by a greatest maturity, we proceed to destemming. The must is macerated with the skins at a controlled temperature of 24 - 26 °C for 7 - 8 days. During this period the wine undergoes fermentation and is then introduced into steel silos. Here it begins the long maturation phase before bottling. This is followed by ageing in the bottle before release.Maturation: Steel Silos
An ancient wine that has always been produced in Salento along with the good old traditions that we respect. It has an intense red garnet colour, typical of Negroamaro. It is dry with a round, pleasantly bitter taste and excellent structure. It goes well with roasted red meats or stews, lamb, kid and cheese.
