Type: Extra Virgin Olive Oil
Vintage: 2018 - 2019

Characteristics: Traditional varieties of olives are used for this oil, such as "Cellina di Nardò" and "Ogliarola Leccese", as well as new varieties such as "Leccino" and "Frantoio". They are picked directly from the tree during ripening using tree-shaking machines, mixed appropriately and then pressed in our mill at a low temperature. The oil's average acidity is 0.5°. It has a mild, sweet, slightly almondy taste and a fruity aroma of olive pulp with very slight oxidation. It is a fresh green colour with golden tints and streaks of darker green which give a strong aftertaste. The oil's excellent features make it appropriate for use uncooked to flavour salads, boiled vegetables, fish, legumes, grilled meats and other delicacies of our land.
